Microsoft have a very usefull white paper on how to use Database Mirroring with Microsoft Office SharePoint Server and Windows SharePoint Services.
It is a good read and specifically outlines what databases from your instances can actually be mirrored, and what cannot. Hence its a good addition to your planning for disaster recovery and redundancy in any MOSS instance when uptime and failover is fairly critical.
